Nutrients in Garlic
Adding roasted garlic to meals gives a lot of flavor and health benefits without added calories. A single clove of garlic contains only 4 calories and less than 1 gram each of protein, carbohydrate and fat. There are a very small amount of vitamins and minerals in garlic, such as calcium, magnesium, zinc, and selenium and vitamins C, A and B. However, most of garlic's health benefits come from potent anti-cancer compounds, immune-strengthening molecules and heart disease-preventing antioxidants it contains.

Immune Function
The sharp flavor, pungent smell, and many healing qualities of garlic are due to an organosulfur compound it contains called allicin. Even in small dilutions, allicin has shown to be effective against two common bacteria groups called gram positive and gram negative bacteria. Gram positive bacteria are staphylococcus and streptococcus infections, and gram negative bacteria are responsible for Salmonella and E. Coli. Harvard Health states that garlic can also aid in fighting off infections from viruses and fungi. A study on garlic and the common cold was done in 2001 in the United Kingdom and published in the journal "Advances in Therapy." People who took garlic from November to February caught fewer colds and had cold symptoms for a shorter duration than those not taking garlic.

Anti-Cancer
Another benefit of allicin is its ability to act as an antioxidant and reduce cancer risk. A study published in the "American Journal of Clinical Nutrition" showed a lower risk of cancer in people living in southern Europe who consume garlic. The greater the frequency of consuming either raw or cooked garlic, the less colorectal, liver or pancreatic cancer developed. Garlic also contains six different phenylpropanoids, which are antioxidants that scavenge cancer-causing free radicals.

Heart Health
In a study published in "Lipids in Health and Disease," researchers found consuming garlic significantly reduced risk of cardiovascular disease. This is believed to occur through reduction of low density lipoprotein, or LDL, cholesterol. Garlic has also been attributed with lowering blood pressure, preventing hardening of arteries, lowering triglyceride levels and reducing blood clots. All of these benefits mean eating garlic regularly can reduce the risk of heart attack and stroke.
